Sweet and Spicy Mexican Filling

This recipe is something that can be put together in a flash, and it so very yummy and filling. With the meat and beans, it is high in protein, and very filling. It goes well served with fresh fruit.
Ingredients
1 lb. Hamburger, browned and drained
3 c. soaked and cooked pinto or black beans
1 c. raisins or currants, soaked for 15 minutes in warm water
1 pkg. taco seasoning (homemade or otherwise)
2 slices onion
1/4 c. salsa
1 pint tomato juice
1 t. cilantro
1/2 t. garlic powder
Tortillas
Avocado, tomatoes, cheddar cheese or other desired toppings
Instructions
- Mix together browned hamburger and beans in saute or frying pan. Drain the raisins and place in blender with 1/2 of the taco seasoning, onion, salsa, and 1/2 of the tomato juice. Blend thoroughly, and poor over meat mixture.
- Add the cilantro, garlic powder, and remaining taco seasoning. Add juice a little at a time, ensuring that the filling doesn't get too watery.
- Simmer for 15 minutes, until desired consistency and warmed through.
- Fill tortilla with filling and desired toppings. Yum!
