Mini French Bread Pizza Recipe

Mini French Bread Pizza Recipe

This mini french bread pizza recipe gives you the best of both worlds, a pizza taste that your family loves, plus a super easy weeknight meal that you can put together in minutes.

My family often enjoys this meal on Wednesday nights before church. It’s a very portable meal, so if  we are in a hurry, my kids can grab a mini pizza and eat it on the way.

To make about 12 mini pizzas, you will need:

  • 1 loaf sliced french bread, preferably traditional sourdough (I get mine from a local bakery)
  • 6 oz tomato paste
  • 12 oz mozzarella cheese, shredded
  • Your favorite pizza toppings, prepared
  • Your favorite Italian seasonings (I use this)

Pizza Toppings:

I used chopped ham this time around. You could also use cooked ground beef or chicken, pepperoni, canadian bacon, black olives, sauteed onion, green pepper, or mushrooms, or vegetables (cooked al dente).

I used a full size sheet pan to bake my mini pizzas. I bought mine at a restaurant supply store, but you can get one here, too.

Preheat your oven to 400 degrees. Grease a cookie sheet or sheet pan (I use coconut oil and a silicone basting brush) or line the pan with parchment paper.

Lay the french bread slices on the pan and spread tomato paste on each slice. Sprinkle a little of your Italian seasoning on each slice. If you don’t have any Italian seasoning on hand, you can also use a bit of sea salt and black pepper.

Top each of the slices with your favorite prepared pizza toppings. I used chopped ham this time.

Finish off the slices with a mound of mozzarella cheese on each one.

Bake in the oven for 10-15 minutes or until the cheese is melted and the mini pizzas are heated through. You may prefer to use a broiler instead, but watch them carefully!

  1. This looks delicious! I might give it a try on Friday, which if pizza day in my family! Last time, me and my brother made delicious crunchy extremely thin-crusted pizzas, topped with tomato sauce, mozzarella cheese, onions and chopped up dates! The recipe for the dough was quite simple, following the Alton Brown’s Good Eats method, involving barley malt.

  2. Wow, these look so amazing, and I can’t believe I’d never thought of this recipe myself. You’ve made me very hungry right now, Ms. Pruitt!

  3. I belong to a pizza eating family and this looks great! I hate making my own dough, too and these are the perfect size!

  4. Oh, wow. I used to make this on bagels, then gave up because of how unhealthy it was! This looks like a much better option! Thanks!

  5. These look so very tasty! I bet the children will love these. A good and quick substitute for pizza. Ideal snack or small meal for when you really don’t have much time.

  6. Oh my goodness! This looks super easy. I’ve always cut a big Italian loaf in half lengthwise and then made 2 pizzas that I then had to slice into portions. This was makes SO much more sense! I’ve never thought to just use tomato paste either. Definitely going to make this this week. I wonder if you lightly toast the bread first if it will stop the sauce from soaking in so much? Or do you find it doesn’t really matter?

Thanks so much for this great idea!
